「神戸にんにくや CALIENTE」は、90年代後半に一世風靡をした「神戸にんにくや」の集大成とも言える店である。「神戸にんにくや」は昔からのファンも多く、空間はこうあるべきという方が多い中でデザインするにあたり、ひとつの仮説を立てた。〈仮説（コンセプト）：「神戸にんにくや」の一号店は実は「ハンター坂 本店」ではなかった。「神戸にんにくや」の前身にあたる「CALIENTE」がこのビルにあり、港町・神戸の感度の高い大人たちが夜な夜な集まる店だった。十数年間その店は内装も調度品も当時のまま閉めていたが、今回、発祥のこの場所で空間をリメイクし 新たに「神戸にんにくやCALIENTE」として再オープンした〉と。古くからの年配のファンや新しく知って来店される若者など、さまざまな客層やシチュエーションが予想されるため、ゾーニングは、オープンキッチンを中心にカウンター席、テーブル席、ハイテーブル席で構成。バルゾーンと3ゾーンに分けた空間デザインは、仮説（コンセプト）をイメージし、機械的に整ったデザインは避け、マテリアルが持つ素材感を最大限に生かして空間に厚みを持たせることにより、新しさと歴史が混在する、神戸らしい大人のカジュアルレストラン空間を表現した。（沼田行正）

“Kobe Ninnikuya CALIENTE” seems to be the final compilation of Kobe Ninnikuya restaurants which became very popular in the late 90’s. There are many longtime fans of Kobe Ninnikuya and they have a steadfast image of its space design. So the designer formed one hypothesis (=concept). “As a matter of fact, the first restaurant of Kobe Ninnikuya was not the one in Hunterzaka. There used to be the predecessor of Kobe Ninnikuya called “CALIENTE” in this building. Sophisticated adults in the port city Kobe gathered every night and had a good time. Since then, the restaurant had closed for the last dozen of years, keeping the interiors and furniture as they were. At last, the restaurant was renovated as new “Kobe Ninnikuya CALIENTE” and opened in its cradle land.” Given a diverse base of customers, ranging from the longtime elderly fans to the young customers who have never heard of the restaurant, the designer situated an open kitchen in the center and around that counter, table and high table seats. The spatial design, divided into the above 3 sections and a bar section, realized the concept by utilizing the thick and warm texture of material, instead of applying the well-ordered mechanical design. This casual dining restaurant for adults is just “Kobe-like” which represents the mixture of old historis and new elements. (Yukimasa Numata)
