ベトナム・ホーチミンで“ジャパニーズヌードルダイニング”の計画。東京・中野にあるラーメン屋の味を、ホーチミンで変わることなく味わえる店である。ラーメンの価格もベトナムの物価に合わせることなく、ほぼ日本と変わらない客単価に設定しているため、現地では高級レストランという位置づけになる。そのため、いかにベトナムの人々に「日本」を感じてもらえる空間にするかがメインコンセプトになった。そこで、さくら、富士山、忍者など、ベトナム人がイメージしやすい「日本」をキーエレメントに、和紙、組子、切子ガラスなど、日本独自の素材や技術で日本らしさを表現した。日本らしさとホーチミンの地域性が融合したNEWジャパンデザインがここに完成した。（藤井文彦／ファン）

“Japanese noodle dining” project in Ho Chi Minh City in Vietnam. In the restaurant guests can enjoy the same taste of the original one in Nakano, Tokyo. Because the price setting of meals is almost the same to Japan and not adjusted for the commodity price in Vietnam, the restaurant is positioned as a fine dining in there. Therefore, the main concept is creating the place where Vietnamese guests can feel “Japan”. We chose cherry blossom, Mt. Fuji, and Ninja, familiar image of Japan in Vietnam, as key elements to express Japaneseness, using Japanese traditional materials and techniques such as Washi-Japanese paper-, Kumiko- refined lattice works-, and Kiriko-glass cutting works-. New Japan design, blended Japan and Ho Chi Minh City, has completed here. (Fumihiko Fujii / fan)
